Lentils among healthiest foods
Lentils (or the masoor or moong daal in India) has so much to offer that it should in one’s diet everyday. It has been rated as one of the five healthiest foods.
Lentils offer 30 percent of their calories from its protein content. This is the third highest protein, by weight, of any legume or nut, after soybeans and hemp.
Lentils contain fiber, folic acid, vitamin B1 and minerals.
Lentils are a good source of iron.
Lentils have high phytate content which can reduce bio-availability of dietary minerals. This can be taken care of soaking the lentils in warm water overnight.
Mixed with rice, it is a complete protein dish.
